Adding resolution options in OS 9?

Looking to add 1280x1024, and possibly 1280x960 to Mac OS 9 Oni.

Also, looking to see if there's a way to specify what refresh rate it assigns to the monitor for a resolution? Or does it automatically pick the highest resolution that the monitor and graphics card both support?

You might try OSGE: http://www.lafty.com/osge.shtml and see what resolutions it offers.
I don't know the answer to your other question.
