How do I re-map keys in the OS X version of Oni?

and why doesn't the force "walking" mode work with caps lock like it does in OS 9?

You can make the changes in the key_config.txt file in the Oni Folder. That's one of the bugs in the OSX version, certain keys are not recognized. 

So you can change bind capslock to walk to bind g to walk, then press the g key then the forward key to get the walk.

I still tried editing the key config file and it had no effect at all on the keymap. I use a trackball to the LEFT of my keyboard so I prefer having the keyboard controls mapped to the numeric keypad.

That's also a known issue, the numpad does not work in the OSX version.  So you'll have to remap to the regular keys, perhaps k l ;
